Three days before gourmands accumulate for a feast true from Vietnam during her home this Sunday afternoon, Aparna Surte, a food stylist and owner of Peckish (a home-based food consultancy venture), recalls a hurdles she faced scooping out an all-vegetarian menu from a beef and seafood-heavy cuisine that a nation is famous for. “I once sent my vegan guest some vegetarian Vietnamese dishes, and they returned them; they were distrustful that a nation could indeed have vegetarian dishes. It took some good convincing,” chuckles Surte, referring to a prior workshop.

Her adore for food, and different influences on her ambience buds from carrying trafficked opposite a US for her consultancy job, desirous her to go over a ardent hobby of recreating delicacies from around a world. “During my college years in Dallas, Texas, we fell in adore with Pho [Vietnamese noodle soup]. It’s still one my favourites,” she says. When she changed behind to Mumbai in 2015, Surte set adult Peckish, that specialises in South East Asian food and explores cuisines from opposite a creation by food walks, cooking workshops and pop-up lunches.
At Sunday’s pop-up, Surte will horde a six-course meal. The elaborate menu will underline dishes like Ca Phe Sua Da (Vietnamese Iced Coffee), Nem Cuon (Vietnamese Spring Rolls with Paneer), Vegetarian Pho Soup with rice noodles, mushrooms and bok choy, Com Tam with Rau Vien (Vegetable ‘Meatballs’ Rice Bowl), and Che Chuoi.
(Vietnamese Plantain with Coconut Cream). The dessert will underline tapioca. “A normal Vietnamese dish is customarily a singular march affair, though we wish my guest to have a finish experience. The list will have a horde of condiments and specialty salsas like Nuoc Cham and Hoisin, so that they can tweak a dishes as per their preference,” explains Surte.
